Culinary Experiment #2 – Raw Beet Salad, Really?

So I’m new to the beet world and just recently learn to hide beets in my juices. I have to hide them still because I’m a fan of that earthy flavor they have which I hear is the reason most people love them. Thought of just eating them raw in a salad did not sound very exciting at all. I went on a hunt for a beetroot salad as my 2nd experiment for you.

I found a lot that sounded not so horrible and this morning I went with a recipe I plan to call Red Twiggy Salad (or some variation of that, lol). As you may have guessed by the fact that I am working on a name for the salad that I liked it and yes sir I think love would be a better term. I was surprised the salad was sweet, so sweet in fact that next time I plan to add more ginger next to give it more of a kick. It was easy to make and trust me even people who don’t like beets will love this salad, as long as they like lime, lol. I plan to add this salad to my regular menu plan.

Crossfit Christmas Party

Went to my crossfit gyms Christmas Party/Beach WOD this morning. Lets say there was more party than workout but it was still a great time even tipsy they can beat me. I ate bacon wrapped jalapeños, Taco Cheesecake from Brooke and homemade cookies but the workout I got made it all even out, lol I hope. I left them playing beer pong at 11:30am, hehe maybe next time guy but I cant waste the calories right now so being drunk around all that food is not a good plan right now. I still dont fit into my goal pants.

Results of Culinary Experiment #1

Culinary Experiment #1 turned out great and was a super duper yummy meal and gave me a new low carb side-dish spaghetti squash. I used it for spaghetti and meatballs but I have a feeling the opportunities are endless and I really look forward to exploring this vegetable.

The official “yummy” sign-off for this dish was received from my bestie the “no thank you” veggie eater and this meal was at least 85% all veggies and she ate 2 bowels.

This adventure was my 1st attempt at cooking and eating spaghetti squash and it was surprisingly successful. I was lucky enough to have one of my closest friends stop by to try it with me. She is not one to eat a lot of vegetables unless its hidden is such a way. She was just as surprised as me as how yummy it was. I look forward to exploring this new vegetable because it will be added to my permanent go- to side-dish #SpaghettiSquashSuccess

Culinary Experiment #1 – What do you think about Spaghetti Squash?

I love to make meals on the weekend and freeze stuff for quick meals in the next few weeks.  This weekend I will try a few new things just to see how it works out like spaghetti squash, Spunky Coconut’s Baked Chicken Meatballs and making my own almond flour. Wish me luck J

Meal- Spunky Coconut’s Baked Chicken Meatballs, squash noodles with Homemade Tomato Sauce

Freezing 1-2 jars of sauce and extra meatballs

Shopping list

  1. 1 Spaghetti squash
  2. Pack of Almonds (almond Flour for meatballs
  3. 2 Zucchini
  4. 5 Carrots (meatballs and tomato sauce)
  5. 1 bunch of Parsley (meatballs and tomato sauce)
  6. Garlic
  7. 1-2 lb Chicken breast
  8. 2 Eggs
  9. 2 Onion
  10. 10 Tomatos
  11. Sun dried tomatos
  12. Chili powder
